I confess, I am someone who lets himself be seduced by wine labels and names!

One day I was wandering around a supermarket and while browsing the flyer on the wine page I noticed this wine with the strange name EST!EST!EST! by Cantina Bigi, truly unknown to me!

I approached the shelf out of curiosity and noticed an interesting story on the back label:

"In 1111, the Bavarian prelate Johannes Defuc, on his way to Rome, sent ahead a servant named Martino whose task was to indicate where good wine could be found, marking the entrance of the inn with the single word "EST" or, if the wine was of particular merit, "EST EST". In Montefiascone, the expert servant found a wine so delicious that he wrote the fateful "EST" three times."

Even more fascinated by the story, I decided to take the plunge on this modest, unpretentious investment!

Some time passed and the moment came to discover what lay beneath that cork!

The white wine is a blend of Trebbiano Toscano, Malvasia Toscana and Rossetto from the Montefiascone area, bottled in Orvieto.

The Montefiascone area is known for its hills with soils of volcanic origin, rich in potassium and phosphoric anhydride.

This white should be served at around 11-12 degrees, the temperature at which it should express itself at 100%.

On the eye, the wine presents a very bright and luminous straw-yellow color; I struggle to distinguish the aromas clearly and decide to rely on the palate to help me – I confess!

The palate confirms the impressions from the nose: few aromas, above all white flowers with a distinguishable hawthorn and moss.

The characteristic that predominates on the palate, however, is the savoriness, accompanied by good minerality and a certain acidity that prevails over everything else; the body is not bad for a white wine.
An overall persistent wine that leaves its flavor in the mouth for a good handful of seconds.

I paired it with a well-matched dish: linguine allo scoglio.

The pairing works, the quality-to-price ratio (on offer, of course) satisfies me, but frankly I would not buy this wine again as it did not particularly excite me: few aromas, little complexity on the palate, and over time I found it cloying, perhaps precisely because of the unchallenged dominance of these redundant notes.
In general, you certainly won't make a bad impression at the table, but you can truly find much better.
