I am a person who pays great attention to details, particulars, and product presentation; I believe packaging plays its part, but at the same time I am wary of products that are too carefully designed to please at first glance.
It is with this background that I approached the tasting of this product with its very eye-catching bottle, ideal for restaurants, bars, and nightclubs.
I uncorked the bottle knowing that, at the very least, if I didn't like it, I could always turn it into a nice lamp!
How the infinity is born
Let's move on to studying the product: born from grapes coming from Miane, a small municipality located at about 260 meters above sea level, in the heart of Valdobbiadene, precisely in the area north of the province of Treviso, almost bordering that of Belluno.
This is a cuvée of extra dry white grapes sparkling wine made using the Charmat or Martinotti method.
The grapes that make up this cuvée come from vineyards located to the south-west, trained using the double inverted arch system with a yield of 140 q/ha, harvested strictly by hand in the second decade of September.
The wine is brought to the cellar and placed in 120 hl stainless steel tanks at a controlled and constant temperature of 12°C for one month, allowing for the perfect blending of the refermentation yeasts and promoting the related intracellular exchange with the noble lees, thus imparting a better overall aroma.
Tasting the infinity, drinking to infinity
Now let's get to the point! Infinity wine in appearance is crystal clear, almost brilliant, with a lovely lively straw yellow color with a few light greenish reflections and fine, numerous, and persistent chains of bubbles.
On the nose it arrives immediately, intense and complex with a broad bouquet of fruity and floral notes that bring to mind fresh citrus fruit, apple, pear, and white peach, as well as fresh white flowers such as wisteria, jasmine, acacia, and a shy white rose.
On the palate it is explosive and enveloping, fresh and savory, where all those fruity sensations revealed on the nose come through. It has a prolonged finish.
All the components of this extra dry cuvée find balance and harmony, delivering an endless pleasurability of drinking – or rather, INFINITY.
Recommended pairings: Fish-based preparations such as seafood appetizers both raw and cooked, seafood risottos, appetizers with mixed cold cuts including smoked varieties, poultry and white meats in general, young and soft cheeses, and thanks to its pleasurability, excellent also as an aperitivo among friends.
INFINITY is an enchanting, engaging wine: capable of surprising and earning appreciation through attention to every detail (not just the packaging!).
Refined and elegant, it stands fully apart from the crowd. "Don't settle – aim for infinity."
